So with each recipe, I will try to give you a  political rant, concern, or kudos. This one has to do with Idaho raising cigarette taxes by $1.25. The American Cancer Association is busy cramming into their heads (politicians) that raising the taxes will decrease youth smoking by 20%. Granted, they are not supposed to buy them, but somehow the child argument always pulls some weight because it is for the 'children.'  Never mind that it will also bring in 51 million estimated dollars that will fund those non-profit jobs and of course help people quit smoking. Yeah, right. Now, if I were a politician I would be asking those spokespeople, like Heidi Low to produce those studies and peer reviewed journal articles to support those claims instead of swallowing their data sheet. But, 51 MILLION DOLLARS - why ask? Yes, thier data sheet offers some references like that HUGE poll that had a sample of 500 commenters and claimed 73% in favor (like that is an unbiased representation? 500 people, folks! WOW!). And, I ask you, just how many kids have you seen lately with a cigarette in their mouth? These people are such hypocrites, if it all costs that much money and KILLS - KILLS - KILLS (Tobacco use currently costs Idaho $319 million a year in health care related costs), take them off the shelves. What a crock of disingenuous rhetoric - they are just a bunch of killers, milking the system instead of cutting to the chase to save lives.

This recipe from Mr. Food, originally for the crockpot that you can cook all day while you are away, however, I needed something down and dirty so I baked mine for about 25 minutes.

 

I like Mr. Food, he offers simple ideas with stuff that you normally have in the house for the everyday housewife, like myself.  I did not have the jalapeno peppers or the olives, but it does not matter this will satsify any hungry camper. I also used canned corn.

It also feeds an army, I won't have to cook for the rest of the week. I added cheese to the cornbread mixture and to the top and it baked into this crusty goodness that you smother with butter.

Tamale Pie - Crockpot version 

Ingredients

  • 2 pounds ground beef, cooked and drainedtamalepie2
  • (28-ounce) cans diced tomatoes, drained
  • 2 cups frozen whole kernel corn
  • (2-1/4-ounce) can sliced black olives, drained
  • medium-sized onion, diced
  • (1.25-ounce) package taco seasoning mix
  • (16-ounce) package cornbread mix
  • 1 cup shredded Cheddar cheese

Instructions

  1. In a large bowl, combine cooked beef, diced tomatoes, corn, olives, onion, and taco seasoning; mix well then pour into a 6-quart slow cooker.
  2. Prepare cornbread mix according to package directions then spoon over beef mixture. Sprinkle with cheese.
  3. Cover and cook on high setting for 3 hours or low setting for 6 hours.

My Cornbread

2 large eggs

1 cup of milk

1/4 cup of oil

1 1/2 cups of yellow corn meal

1 cup flour

1/4 cup of sugar

2 1/4 teaspoons of baking powder

3/4 teaspoon of salt

Mix all together and bake for about 25-30 minutes at 450 degrees. Spray your pan or in this recipe just spread over the top of the meat mixture if you bake it in the oven.

(You can also add jalapeno peppers or green chilles , cheese, and even creamed corn to cornbread recipes.)
