My Test Kitchen
I tried this recipe that was produced on the Today Show. Soak chicken breasts or tenders overnight in coconut milk, then dredge into egg and flour. After that, deep fat fry them. The crust is fantastic. Very flaky and light. If you don’t like sweet, this may not be for you. However, the squeezed lime over the finished product creates a unique flavor that only the accompaniment of a margarita or two could jazz it up more. I haven’t tried the potato salad which is laced with rum and spices. Speaks of SUMMER! Can’t wait to try this batter on prawns.
