Homemade Pepperoni Pockets

Some folks call these calzones and then some of us just call it a pocket or a homemade baked sandwich. But, there are times I think I have Italian blood in my veins when I cook up something from scratch with tomato sauce and cheese. I love to cook and it's something we all have to do and that is to eat. The challenge is not succumbing to the fast food market, frozen entrees, and quick fixes (yes, I am guilty) but, when you don't feel like going to the store, a cook will be surprised at herself to what she can whip up with very little work. Nothing beats homemade bread and I am one for a recipe that is really really easy with just some yeast and flour, sugar, salt and water and a little butter.

My Mushroom Garden - the end
Yes, there are mushrooms on this french bread pizza if you look carefully. On day four I was estatic with the growth of my mushroom garden in a box. However, little did I know that on day 5 and 6, these guys had pretty much reached their fullest potential. Looking forward to massive growth I waited just a day or two more, too long to harvest the crop. Itty bitty that they were, I was sure that these morsels of delight would grow a bit larger. Nope, you need to take them down soon, before they start to dry up and yellow. Seriously, too pathetic for the money shot, so I put them to death on my french bread pizza. The crop is maybe a 4- 6 oz. bunch that would deep fat fry nicely in batter as a one man appetizer. Not to put these pricy devils to waste, I chopped them up and garnished my french bread pizza with these oyster mushrooms. I think of how many button mushrooms I could buy for 20 bucks and I question this adventure. Was it worth it? Yes, and now I am growing the other side of the box to get all I can get out of my mushroom garden in a box loaded with recycled coffee grounds. They are really fun and they will kick start you into thinking about growing your own and definitely a fun learning experience for kids. I just don't think there there is enough on the one side to really make a real dish of spaghetti, so with fresh baked french bread from your local bakery, layer it with olive tomato sauce, pepperoni, green onion, red and yellow peppers, mozzarella and parmesan cheese, then garnish this dinner with a little mushroom gold! Bake in oven for about 20 minutes to get a nice crisp and broil for 1-2 minutes to get the bubbly brown and you have a super tasty french bread pizza. I found this recipe from Cookie Madness and decided to give it a try. This is an award winning recipe. It's an old fashioned recipe that mimics the Kit Kat candy bar. I did exactly as the recipe directed but, I did not perfectly line up the Ritz crackers. It does not matter, these guys do the trick no matter how they are managed as they are some definite yummy for the tummy. They are made of layers of Ritz Crackers and a boiled concoction of butter, graham cracker crumbs, and sugars that tastes like caramel, topped off with a melted finale of peanut butter, chocolate, and butterscotch. Crunchy, just like the candy bar, I promise that these will be a hit. Anyone who dares to indulge will be forever indebted to you! These are very thick. My Mushroom Garden - cont'd
This was day 1 of my mushroom garden in a box that I purchased for 20 bucks. These pics are of day 4 and day 7. Once these buggers take off, you can turn your back and they are bigger once you face them again. These are so much fun, get this as a gift for your kids or grandkids, they will love them. These are so exciting, that I have decided my next step is to see if I can grow button mushrooms in the house. I guess a really nice spot is below your sink! There are all sorts of instructions out there on the web. thus, I guess it's most likely a crap shoot, but it will be fun to try. Besides, it's cheaper than growing salt water fish that you cannot eat.
My husband says I better ace this self guided mushroom course, I am taking, so I don't grow a fungus amongus that will put us in the sick and dying zone. I told him that I will be sure to buy certified mushroom spores and quality manure. These oyster mushrooms are going to be BEAUTIFUL on day 14 and most likely ready for the spaghetti! Nice article by the IS, but where are the pictures? We need pictures! What did they eat? What did they wear? Were they dancing and getting sloshed? Or was this a private day off and no cameras allowed? Have you noticed how private these reporter types are? They don't want to be in the news. Dan Popkey wins reporter of the year at Idaho Press Club event I am growing mushrooms, this photo is of it's first day. I am a kid at heart when it comes to mushrooms. You take this bag of gunk out and soak it for 24 hrs then, you mist it twice a day, 2-4 times. This is the first day, I will keep you up to date and post the next photo of this fabulous endeavor on day 7. The stuff is made of coffee grounds and spawn, which is the mushroom seed. These are oyster mushrooms. I LOVE mushrooms and I enjoy hunting them as well as identifying the little critters. It is morel time, BTW! When these mushrooms grow to harvest size, I am going to make this mushroom pasta in pink sauce. Then, there are these shitake mushroom log rolls, I want to try - are they not So, here is another tidbit, I have to give you a political tidbit! Ever since the Judiciary Branch decided to allow public comment concerning the changes to their rules, I try to remember to go to their site periodically, because this stuff is not widely published or known. But, this one is very smart and progressive and I want you all to know about it. It is interesting that there was a need to clarify and amend Rule 32 even though most of the stuff that is not subject to disclosure was protected by their own privacy rules (material about children is common sense) in the first place and judges can voluntarily seal sensitive material, but some judges just don't get it, I guess. This is a good change. Last day to comment is April 30th, 2012. They will do what they want, but it's nice to tell them something positive, when you see that they are doing something right. For those of you who want to know who was awarded what in the
cute? Ma and Pa have me a going. They are injected with the spawn and guaranteed to grow. Yes, my ultimate goal is to do this myself in a spot in the backyard. Maybe, button mushrooms, they look easy enough. Mushrooms are very temperamental, getting my own crop of morels would be like winning the lottery. But, you never know, maybe someday, I will win the lottery and buy a mushroom farm! ;-) Here is one, I took a photo of a couple of years ago in October. It's beautiful, but you can't eat it!
